
Banana chocolate chip muffins, the OG. But elevated with the addition of oats and dried cranberries, and oh so easy to make- just mix it all in one bowl!
Best enjoyed in the afternoon with a cup of coffee, preferably when the toddlers are napping. Because you know if they’re awake they’ll ask for a bite, and then they’ll ask for another, and before you know it, they’ve eaten the whole thing. Luckily you’ve got eleven more.
Ingredients:

- 2 Cups Mashed Bananas, very ripe
- 1 Egg
- 1/3 Cup Neutral Oil (such as avocado)
- 1/2 tsp. Vanilla
- 2/3 Cup White Sugar
- 1 1/4 Cups White Flour
- 1 1/4 Cups Rolled Oats
- 1 1/2 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1/2 tsp. Salt
- 1/2 Cup Dried Cranberries
- 1/2 Cup Chocolate Chips
Method:



Preheat the oven to 350 degrees. In a large mixing bowl, mash the bananas with a whisk or a potato masher.


Add the egg, oil and vanilla to the mashed bananas, whisk until combined.


Whisk in the sugar.


Add the dry ingredients to the mixing bowl, the flour, oats, baking powder, baking soda, and salt. Mix until just combined.


Add the cranberries and chocolate chips, mix until just combined.


Line a muffin tin with liners. Divide the batter between the twelve muffin liners. Bake for 25-30 minutes until golden brown and baked through.



Banana Chocolate Chip Cranberry Oat Muffins
Ingredients
- 2 Cups Mashed Banana

- ⅓ Cup Oil neutral oil such as avocado oil

- ⅔ Cup White Sugar
- 1¼ Cups White Flour
- 1¼ Cups Rolled Oats
- 1½ tsp. Baking Powder
- 1 tsp. Baking Soda
- ½ tsp. Salt
- ½ Cup Dried Cranberries
- ½ Cup Chocolate Chips
Instructions
- Preheat the oven to 350°.
- Mash the bananas in a large mixing bowl. Add the egg, oil, and vanilla, mix well. Add the white sugar and mix until thoroughly combined.
- Add the dry ingredients, the flour, oats, baking powder, baking soda and salt. Mix until just combined.
- Add the dried cranberries and chocolate chips, mix until combined being careful not to overmix.
- Line a 12 cup muffin tin with muffin liners. Divide the batter between the liners.
- Bake the muffins at 350° until golden brown and cooked through, 25-30 minutes.
