Classic Buttermilk Pancakes

Corn flour, dextrose, modified milk ingredients, mono calcium phosphate, potassium bicarbonate, sunset yellow. Do you know what any of that is? I sure don’t! But those are just some of the ingredients in a pancake mix you’d find at the grocery store. Skip the chemicals, and whip up some flapjacks the old fashioned way!

A family recipe, given to my mum at her wedding shower in 1995. Perfectly sweet and fluffy, and so easy to make- mix it all up in one bowl!

Ingredients:

  • 2 Cups White Flour
  • 3/4 Cup White Sugar
  • 2 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1/2 tsp. Cinnamon
  • 2 Eggs
  • 2 Cups Buttermilk
  • 1/2 tsp. Vanilla

Method:

In a medium sized mixing bowl, mix together the dry ingredients. The flour, sugar, baking powder, baking soda, cinnamon and salt. Whisk until combined.

Add the wet ingredients to the bowl, the eggs, buttermilk and vanilla. Whisk until combined.

Meanwhile, preheat a griddle or frying pan over medium heat.

Drop the pancake batter on the frying pan or griddle by 1/4 cupfuls, several inches apart.

Cook over medium heat until bubbles on the top “pop” and the sides appear dry/cooked.

Flip the pancakes, and cook until the other side is golden brown.

Serve warm with butter and maple syrup!
