Classic Buttermilk Pancakes

A family recipe, given to my mum at her wedding shower in 1995. Perfectly sweet and fluffy, and so easy to make- mix it all up in one bowl!

Equipment

  • 1 Griddle

Ingredients
  

  • 2 cups white flour
  • ¾ cup white sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ½ tsp. cinnamon
  • 2 cups buttermilk can substitute sour milk or liquid whey
  • 2 eggs
  • ½ tsp. vanilla

Instructions
 

  • In a medium sized bowl, mix together the dry ingredients; the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  • To the mixing bowl, add the wet ingredients; the buttermilk, vanilla, and eggs. Whisk until combined. Meanwhile, preheat a frying pan or griddle over medium heat.
  • Drop batter by ¼ cupfuls to the preheated pan or griddle.
  • Fry until the bubbles pop on top. Flip the pancakes and continue to cook until golden brown.
  • Serve warm with maple syrup!

Notes

To make your own sour milk, in place of buttermilk, mix 2 tsp. of vinegar or lemon juice in to the milk and let it sit for 15 minutes.
