Instructions
In a medium sized bowl, mix together the dry ingredients; the flour, sugar, baking powder, baking soda, salt, and cinnamon.
To the mixing bowl, add the wet ingredients; the buttermilk, vanilla, and eggs. Whisk until combined. Meanwhile, preheat a frying pan or griddle over medium heat.
Drop batter by ¼ cupfuls to the preheated pan or griddle.
Fry until the bubbles pop on top. Flip the pancakes and continue to cook until golden brown.
Serve warm with maple syrup!
Notes
To make your own sour milk, in place of buttermilk, mix 2 tsp. of vinegar or lemon juice in to the milk and let it sit for 15 minutes.
